Brunch Pizza

Have you been looking for something new to try for Brunch?  Well here it is the Brunch Pizza.  You should be able prepare this in 45 minutes from start to finish.  Me personally I like to add the optional ingredients because it’s like having a meat lovers Pizza.  I hope you enjoy.

Brunch Pizza

Pizza Crust:

1 package (24 ounces) frozen hash brown potatoes, thawed and broken apart
2 eggs
   Salt and pepper

Egg Topping:

7 eggs
½ cup milk
1 ½ cups shredded cheddar cheese (or cheese of choice)

Optional:

Chopped onions
Chopped green peppers
Sliced mushrooms
Chopped ham
Cooked and crumbled sausage
Cooked and crumbled bacon

Preheat oven to 400 degrees.

Use parchment paper (for easy clean up) and Pizza pan or cookie sheet.

Combine potatoes and 2 eggs in mixer bowl.  Mix thoroughly and spread on cookie sheet into 14 inch circle.  Pat down with back of spoon or hand to make crust.  Season with salt and pepper.     Bake 20 minutes.

Whisk eggs and milk for egg topping in bowl.  Place in microwave and cook on high for 3 minutes. Remove, stir and cook another 3 minutes.  Take out, stir and spread eggs evenly over potato crust.  Layer with optional ingredients if desired.  Sprinkle with cheese and bake another 10 minutes.  Cut into wedges and serve.

Makes 10 to 12 servings.
