End of the Money - Burritos

In keeping with the theme from previous recipes of being short on cash, a few days to payday and trying to figure out what's for dinner, try this filling for burritos.

2 pounds of pork (whatever is on sale or really cheap)

28 ounces of tomatoes (this is one big can or fresh tomatoes), chopped

5 cloves (whole clove buds)

3 tablespoons of oil

2 cloves of garlic, chopped

1 medium onion, chopped

1 Green pepper, sliced into strips

dash of black pepper

1 package of tortillas (dozen to a pack)

Shredded cheese is optional

In a large skillet on medium heat, heat the oil and then add the onions and garlic.  Season with a little black pepper.  Stir and cook for about 3 - 5 minutes, until onions are soft.  Toss in the clove buds,  add the pork and cover.  Stirring frequently to avoid burning, cook 5 mintues, turning pork over once.  Add the chopped tomatoes, including the juice from canned tomatoes (if using fresh tomatoes add 3/4 cup of water) .  Cover and cook for 10 minutes, stirring occasionally to avoid burning.

Remove pork to a plate and use two forks to pull the pork apart into large shreds..  If the pork is not cooked all the way through, slice the pork into large pieces and return to the skillet.  Cover and cook another 10 mintues, stir frequently.   Once you have shredded the pork, return it to the skillet and add the green peppers.  Cook covered for 5 minutes.  Uncover and cook until most of the liquid has been cooked off.

This should be rather goopy, but put about 1/3 to 1/2 cup of filling on a tortilla and roll up for a burrito.

Makes about 10 burritos, slightly more if you add shredded cheese to the burrito before rolling.

Made this last night for $8.63 (canned tomatoes),  Could have spent less if I'd made the Tortillas (they were $1.99 - can make a dozen for about $0.30) and bought fresh tomatoes on sale (1 pound fresh for $0.99, canned were $1.49).  I had the oil, cloves, garlic and black pepper already in the pantry.
