End of the Money - Sandwich Fillings
Sandwiches are a great fall back when it comes to a quick, cheap dinner and also as a brown bag item. There's more to a sandwich then Peanut Butter and Jelly though. Try some of these fillings to keep your lunches and dinners a little more interesting and stretch your food budget.
Chicken Salad Filling
1 Chicken Breast - boiled and chopped
Salt and Pepper
Mayonaise or Salad Spread
Optional:
Crumbled Walnuts, Chopped Cranberries, Fresh Basil, Chopped Dates, Curry Powder, Diced Celery, Chili Powder, Chinese Five Spice, etc...
In a bowl, mix the chopped chicken with the Salad Spread or Mayonaise. Season with a little salt and pepper to taste. If desired, add in any of the optional items, perhaps even two or more of the items.
This makes enough filling for about 3 to 4 generously filled sandwiches. Typically, this costs about $1.00 a sandwich (including bread).
Egg Salad Filling
1 Hardboiled Egg
1/4 cup Mayonaise or Salad Spread
2 Tablespoons prepared Mustard
Salt and Pepper
Optional:
Fresh Basil, Chopped Celery, Diced Ham, Shredded Cheese, Curry Powder, Chili Powder, etc...
Peel and dice the Hardboiled Egg. Mix in Mayonaise/Salad Spread and Mustard. Season to taste with Salt and Pepper. Add in optional items if desired.
This makes enough filling for 1 sandwich. Depending on the optional items included, this sandwich typically costs less than $1.00 each.
Use the basic formula (Mayo, Salt and Pepper, maybe mustard and optional items) with Turkey, Ham, Grated Cheese, and Canned Tuna. Not so good with Beef or Pork or so my husband tells me.
By adding the optional items, it changes the taste of the filling a little bit and keeps you from getting bored with your sandwich day after day.
It takes about 1 1/2 hours to make up 3 or 4 different sandwich fillings, enough for lunch all week. Prepping a filling for dinner can be done along with cooking up a soup for a warm, filling winter meal in relatively little time.
